The zucchini plants continue to produce lots and lots of zucchini. I even dusted the cobwebs from this old classic: zucchini squares. Couldn't be easier. Combine 3 cups sliced zucchini, 1 cup bisquick, 1/2 cup parmesan cheese, 1/2 cup diced onion, 1/4 cup olive oil, 4 eggs, 2T dried parsley, pinch of oregano, pinch of pepper, couple pinches of salt. Bake in a cakepan for 35 minutes, 350 degrees. Cool and then cut into squares. This was standard at picnics when I was a kid, but I hadn't made any for years.
